Meal Plan #1 w/ Grocery List




Monday - shrimp scampi

Cooks in 30 min Feeds 4 people


In a pot boil the pasta until done. Separately, in a skillet, cook the shrimp in the pre-made scampi sauce. Nice meal, while still being simple and fast enough for a Monday meal.



Tuesday - meatball subs

Cooks in 30 min Feeds 4 people


In a pot, cook the meatballs. Once done, pour tomato sauce over the meatballs and mix together. Put three meatballs into each sub roll, cover in mozzarella cheese and bake for a few minutes on 350°. Something hearty so Tuesday doesn’t feel like a second Monday!

We saved some meatballs for our pasta later in the week, precooked and covered in sauce!



Wednesday - chicken cordin bleu

Cooks in 25 min some prep time required Feeds 4 people


Take thin cut chicken breasts and use a meat mallet to tenderize the meat. Next coat the chicken in flour, then into an egg wash, and bread crumbs. Repeat until coated to desired thickness. Lay each breast out on a tin foiled baking sheet. Take your desired cheese(I prefer white American cheese) and break in half and stagger until the breast is covered, then repeat with ham. Next take the small end of the chicken breast and roll up. Hold it in place with some toothpicks. It’s ready for the oven! Put in the oven for 25 minutes on 350°.

Thursday - pork chops

Cooks in 20 min some prep time required Feeds 4 people


Grab your favorite breading, this week instead of the classic shake n’ bake, we decided to try the Hidden Valley version! Follow directions for coating on the box, throw in the oven for 15-20 min on 400°. Simple, delicious meal!



Friday - pasta w/meatballs

Cooks in 20 min needs to boil water first Feeds 4 people


Friday nights one of us is usually out late, with friends or at the barn, something is always going on. So Friday’s are kind of a left over day or something quick. This week we boiled pasta and put leftover meatballs on top. Done!



Saturday - chicken and broccoli

Cooks in 45 min some prep time required Feeds 4 people


Saturday’s are a day for errands or relaxing. That’s why I love this meal. It’s super easy to prep during the week then throw in the oven when I want it. Earlier in the week, I boiled the chicken and broccoli. Shred the chicken into pieces and dice up the broccoli. Mix together in a glass casserole dish, pour cream of chicken over it, ¼ cup mayo, ½ cup of water, mix all of this together, cover with cheese (I used cheddar and some mozzarella) then cover with breadcrumbs.


When you’re ready just put it in the oven for 45min at 350°! Happy Saturday!



Sunday - pizza

Sometimes we deserve to be easy, we used frozen pizza this week but wait for the pizza recipe we’re making in a few weeks!

1 large package of chicken breasts

1 big bag of meatballs

1 package of sub rolls

1 can of cream of chicken

1 small bottle of mayo

1 can of tomato sauce

2 boxes of pasta

1 can of breadcrumbs

1 package of ham

1 package of each mozzarella and cheddar

2 heads of broccoli

1 package of shrimp

1 package of Campbell’s shrimp scampi sauce

1 frozen pizza
